Chef Spotlight: CUCA, Jimbaran
Cuca Restaurant is a casual sharing experience, located on the Jimbaran coast and serving some of the tastiest and unique dishes in Bali. We spoke to their Chef Kevin to find out more about the magic that happens in the kitchen.
Chef Kevin Cherkas has an enviable track record developed in some of the world’s most outstanding restaurants. In Spain, he honed his skills at Michelin three-star Arzak Restaurant in San Sebastian, Michelin three-star El Bulli in Roses, and Michelin two-star La Broche in Madrid. He also left his mark in New York City during his tenure with Daniel Boulud at his highly regarded Michelin three-star Daniel.

Where did you grow up?
Where were you trained?
I began my training across New York, Spain and San Sebastian. In the past 7 years I’ve been sharpening my skills with Shangri-La hotels in Singapore and Malaysia.
Best meal ever eaten?
Dungeness Crab in Tofino, Canada. We went to the port and bought crabs just out of the water and cooked them simply at home that night. My god they were unbelievable, the next say we went back to buy twice as much.
Most challenging ingredient to work with?
Seafood, it is very unforgiving. It is either perfectly cooked or crap.
What celebrity would you like to cook for?
What celebrity would you like to cook for? Our customers are more important than any celebrity as they allow us to do what we love, so we give our best for them, but if I had to pick one it would be someone who is really funny like Chevy Chase or Eddie Murphy.
